3. Bake in preheated oven for 30 minutes.

4. Carefully remove the squash from the oven, and scoop the flesh into a blender or food processor. Add chicken stock, sage, and cream, and puree until smooth.

5. Pour the soup into a serving bowl, and garnish with croutons or freshly chopped sage leaves, if desired. Serve immediately.

  • 1 acorn squash, halved lengthwise and seeded
  • 1/2 pound ground pork sausage
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/4 cup chopped green apples
  • 1/4 teaspoon ground sage
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup chicken stock

Instructions

1. Preheat oven to 375 degrees F (190 degrees C).

2. Drizzle olive oil over the squash halves, and season with salt and pepper. Place the squash halves, cut side down, on a baking sheet.

3. Bake in preheated oven for 25 minutes.

4. Meanwhile, cook sausage, onion, celery, apples, sage, salt, and pepper over medium heat in a large skillet until the sausage is browned and the vegetables are soft. Stir in chicken stock.

5. When the squash is done, spoon the stuffing mixture into the center of each half. Serve immediately.
